I started my cheffing career in the Conrad hotel by accident (I had written “Cooking” as an interest on my CV for a barman position, even back then chefs were hard to find!), but I quickly hooked, I couldn’t believe I was being paid to do my favorited hobby. When I found out the chef and his entire team where leaving, I went to find a better opportunity. I was lucky enough to be taken on as an apprentice in Ireland best restaurant Thortons on the Green.
For the next 8 years with Kevin Thorton, I learned how to be a chef in one of the worlds best kitchen. It was an incredible time, and I loved every minute of it! I was lucky enough to learn what to do from some amazing chefs, including Kevin himself, and learn what not to do from some other chefs!
After Thortons, I worked in London for 7 Years; it was a very informative time, even if I didn’t find any kitchens that had the magic of Thortons.
Various Sous chefs and Head chefs Jobs taught me a lot about the management side of the business and the staffing problem inherent in the industry even back then.
My wife and I moved from London to Bangkok, and we’ve been here for 6 years so far. I have opened a Cooking School, and when Paddy asked me if I could get any chefs, I said, “Yes, loads of Chefs! Amazing Chefs, Educated Chefs, Highly trained in the world’s best hotels and Highly motivated Chefs,” and WeHaveChefs was born.
